Heritage Bison Ranches Chili Recipe

Rachel's Simple Bison Chili Recipe

(the harvest crew loves when I make this)


2 lbs Heritage Bison Ranches

ground bison/bison stew meat/cooked shredded bison roast

2 large onions-chopped

1 green pepper chopped(optional)

2 cans chopped tomatoes-do not drain

1 can black beans-do not drain

1 can kidney beans-do not drain

2 cans pork and beans

1 can condensed tomato soup

1 cup ketchup

1 TBSP pepper or to taste

1 TBSP salt or to taste

3 TBSP chili powder or to taste


Brown the ground bison/stew meat with the salt, pepper, onions, and optional green pepper. No need to drain the grease with our lean bison meat because there won't be any! Transfer to large kettle or crock pot. Add remaining ingredients and simmer, the longer the better! If using the shredded bison roast, cook and shred the bison roast ahead of time. I like to put mine in the crockpot the day before. All I do is salt and pepper any Heritage Bison Ranches bison roast on low for 6-8 hours. As soon as it pulls apart with a fork its done! Saute' the onions and green pepper in a little olive oil, then add all ingredients together and simmer. Serve with cheese and sour cream and any other toppings you like.
