Crockpot BBQ Pulled Bison
1 lg red onion sliced
2.5 lb bison chuck roast
2 TBSP coconut oil melted
Liberal amounts of salt and pepper to taste
1 cup water
BBQ sauce of your choice
Pat dry your bison roast dry with paper towel. Use your melted coconut oil and rub it all over your chuck roast and then season liberally with salt and pepper. Line the bottom of your crockpot with your sliced red onion. Place your roast on top of the onions and add your 1 cup of water to your crockpot. Set on low and cook 10-12 hours. Once your roast is done you should be able to shred it with two forks. Shred the meat to your liking, I like to leave mine in the juice in the crockpot until serving. Plate your bison roast and dress it using the BBQ sauce of your choice. Enjoy!
